It’s good to get it to windowpane stage. Did you knead it by hand or with a mixer? An hour is a pretty long bake, so it may have over or under proofed. Feel free to send me a photo of the bread and I will help you troubleshoot!
Hi Nicole, so sorry I missed this message! If you prefer sprouted wheat berries for your family, go for it! Since the sourdough process soaks and ferments the grain, I feel good about purchasing non-sprouted 😊

If I’m using a kitchenaid stand mixer , do I knead for 10 mins or just keep checking for windowpane? Also what speed do I knead on?
8-10 mins in the kitchen aid. It does not need to pass windowpane :) I will message you!

You can absolutely use the sprouted wheat berries 1:1 in all of my recipes 😊

Can I cold ferment instead?
I have not tried but I think that would be fine! I would aim for 8-12 hours in the fridge. Let me know how it goes!
